Opal Creek is about 20 miles from our dairy. After you reach the end of the road, it's still a good half hour walk into the Cascade Mountains. As you climb through one of Oregon's old growth forests, your efforts are rewarded as you overlook a pristine, ancient stream that runs green and blue and leads to one of nature's elegant waterfalls. It is being in the mountains at this site that brings out the spiritual in all of us. Our washed rind cheese is moist and chewy, meaty with a flinty finish.
Roaring River
Washed rind, cow milk cheese
Our newest cheese, washed in Merlot wine every few days. It's moist texture is chewy with a mild, grassy, earthy flavor.
Odessa Blue
Natural rind, sheep cheese, or blended cow and sheep cheese
Odessa Blue, while only lightly blue, is rich and complex in texture and flavor. It is crumbly and moist, nuanced and sublime.
