This is one of our favorite cheeses and definitely a popular choice. This cheese is named after our first and most endearing ewe, Val. Valentine can be buttery, herby with an elegant rich finish. When aged just right, it can be drippy and full of sheep milk round and soft deliciousness.
Adelle

Adelle has become our most popular cheese due to its irresistible charms. Light and fluffy, creamy and smooth, buttery and citrusy, it is the perfect balance of flavors that make you wonder if it's is really cheese or something just divine. Yes, this is a little over the top, but from Oregon to New York, its fans have made this cheese a memorable cheese for many a special occasion.
Pearl
A pasteurized soft-ripened cow milk cheese
Some cheeses are like a little secret. While its cultures are simple, it has depth of flavor. While it has a white coat, there is a touch of ash across its surface. When you taste this little gem, it explodes with a deliciousness of creamy milk and lush flavors, a wonderful indulgence.
