We chose to make a sheep dairy and sheep milk cheese for three reasons. Sheep milk cheese has been made for thousands of years and some of the greatest cheeses of the world are still made with sheep milk. We also like sheep, especially our East Friesian sheep, which are calm and sweet animals.  After our boys were born, we discovered they were allergic to cow and goat's milk, thus began our journey. Sheep milk was the one milk that was nourishing to them, and finally reason three, this is fun. There is great pleasure in walking our fields, seeing that the sheep are comfortable and healthy and then taking our sheep milk and working as a family to create what we hope are healthy, interesting and enjoyable cheeses
